Chicken Croquettes
(Another classic from Mom’s great green cookbook)
1/3 cup butter
1/2 cup flour
1.25 cups chicken stock
2 egg yolks
3/4 milk (cream suggested)
2 cups finely diced, cooked chicken
Melt butter, cook together 10 minutes. Mix in chicken and cool overnight in 9x13 pan. Roll into cylinders, bread, eggs, bread.
